An Excellent Pancake Recipe

4 eggs, room temperature
1 cup milk
2 teaspoons vanilla extract
1 tablespoon Lakanto
1/2 cup coconut flour
1 teaspoon baking soda
1/2 teaspoon sea salt
butter for frying



Preheat griddle. Beat eggs for about two minutes, then add milk and lakanto. In separate bowl, combine flour, baking soda, and  sea salt. Mix  dry and wet ingredients. Grease griddle and pour batter on to griddle in separate spoonfuls. Cook for 2-3 min. on both sides.

Phase 3~ Cheesecake

If you are like me, phase 2 was filled with the many food dreams,wishes, etc... that phase 3 would allow- Bacon, milk, cheese ( maybe even sugar, if I'm lucky!!!). But, now that I'm on phase 3, neither my schedule nor my budget allows such complicated and pricey sweeties.

What am I saying?

In essence, this cheesecake solved all my problems. ALL OF THEM...just kidding...

This recipe was excellent, however, I don't need/want the crust etc...

Anyway, here is my modified little version!

2 packages of cream cheese
1/3 cup Lakanto
1/4 cup Xylitol
1 t. vanilla ( make sure there is no sugar added!!)
2 eggs
7 drops of capella flavoring ( I usually use NY cheesecake...it's excellent)

Preheat oven to 325 degrees. Mix cream cheese, sugar, vanilla, and capella drops. Then mix in eggs.  Place in muffin tins, and bake for 25 min.

Phase 3 ~The Wonders of Capella drops

Ok. To start, I love capella drops. They make everyday extraordinary....but seriously, they are great.

Capella drops are flavor drops; you can add them to coffee, tea, baked goods, desserts( i.e. pretty much anything that needs a little...zing). I add them to my oopsie rolls, whipped cream, and cheesecake.

There are several differing flavors,( caramel, Boston Cream Pie,Double Chocolate, Chocolate glazed donuts etc...) but to me the best is Dutch Chocolate Mint.

Phase 3 ~Whipped Cream

Just experimented with whipping cream this afternoon..... soooo good.

1 cup whipping cream
1 packet stevia ( I used about a tablespoon of xylitol)
2 drops of capella ( more or less to taste)

Simply freeze mixing bowl and mixers for about five min. Mix ingredient for 3-5 min. I used this to top my completely delicious mini-cheesecakes and, let me tell you, it was simply divine...

Introducing Me

Hey guys, it's me again.  I am so excited to begin. So... here goes....


(Well, well, well...what have we here?)  :)


I have completed both phase 1 and phase 2. Like a good girl, I have strictly followed protocol and now that I'm in phase 3, I'm ready to experiment with some real food!!!!
